Chinese Food: A LINUX recipe.



I can't believe I missed this TED talk which appears to have been on the site since December last year and that Jason over at 88:Bar has picked up on. It's well worth a look and is particularly worthwhile when thinking about the importance of food outside of nutritional value alone. It's hugely important as a cultural and sociological dynamic. Much more than we would normally guess. Nice find Jason.

I've had a terrific day today as I managed to crowbar myself off fantasy island where I'm staying and make it to Hong Kong central for a full-on slap-up English Breakfast 'power meeting' at the Flying Pan (I went for the 'Fly Up' with extra side of English sausage just creeping into the picture on the bottom right) We had a terrific time because I'm a breakfast connoisseur and when tanked up on English Breakfast tea can wax lyrical with Shakespearean soliquoys or even riff on with an Iambic Pentameter (when pushed )about stuff like plate sizes, Croydon fry ups, Kate Moss and hygiene (it's all true), Audrey in Croydon who keeps it real, her ex partner Rob who is a FASHION HO (but a bit of a genius with it) responsible for educating me both on my degree and more importantly on Vivienne Westwood and the punk ethic among many other things.

I even launched into my recently formed "Hierarchy of Nuts" speech because that's the stuff that fills my head at random points. Do you want to hear it?

No I didn't think so but tough luck, as I made sure that Sherri (who is doing something very interesting with a boutique agency network start-up and her interactive head honcho endured my ramblings) I think I should be sharing it with you too.

It goes like this top of the nut food-chain is the Macadamia and below that is the Brazil, Walnut, Almond or Pistachio (interchangeable) followed by Hazlenut, and then there's a whole sub hierarchy of peanuts starting of with dry roasted and shell steamed (Asia only) and ending up with ready salted and then those awful lighly salted partly husked (is that a word?) cheap peanuts that cheapskate bars serve thinking they're doing us a favour when in fact they only serve to remind one of the poverty of taste being endured but more importantly I felt compelled to share that the Macadamia is the fillet steak of the nut world -  juicy, meaty, tender, and I think we concluded that the likes of the almond are not fully represented if the whole cracking procedure (fiendishly difficult in the almond's case) is not brought into the hierarchy metric. Good point I thought when it first raised.

Anyway, it's important to have an opinion on things as a a planner and the nut allegory only serves to demonstrate that. My planning mentor was alway one for making a game out of these things and would endlessly press gang us with impromptu list-games about books, movies or whatever he deemed worthy of inspection. This was before the ubiquity of mobile phone internet of course but it's a loss we should be aware of.

Lastly, because it was such a grand fry up I insisted on a photo of the glorious spread. I thought briefly, and not for the first time that black pudding is in my case an unavoidable  addictive reason for not giving up meat products (along with bacon, but not sausages) because despite considerable moral and ecological arguments for giving up meat I don't think I can - which fills me with horror . I have the ability to break down and weep or write poetry about black pudding and also chuckle as I did today when Sherri asked what it was made from. Pigs blood innit.

Along the way, I shared the Asian Poses websites for the pic above, and so I opted for the cutting edge vogue, of the puffed cheeks looks coupled with the rapidly fading Churchill V sign. You should try this shit because Asians (particularly girls) are well ahead of the game when pulling camera poses and it can rescue a bad pic or easily replace that awkward scowl that is meant to convey modesty but looks like glumness in many a random occidental snap. Binding Feet

A mother or grandmother typically began binding her daughter's or granddaughter's feet when the child was between the ages of four and seven. The process was started before the arch of the foot had a chance to properly develop. Binding usually started during the winter months so that the feet were numb, meaning the pain would not be as extreme - Wikipedia

Trashvertising


I couldn't help laughing at this bag I saw in Xidan over the weekend. I'm probably going straight to hell aren't I?


There's an anthropological/linguistic/ethnographic study in the waiting for this little number above. I'm being serious because actually it's unacceptable in many Asian cultures to wear this and yet the intended irony has gone off-skew with this example I saw in Beijing. Lauren or Angus might have a bit to say on this.


Everybody loves a bit of Exciusive design don't they? Just splendid!


Or can we safely blame Moschino for this kind of stuff.

The Official Olympic Cheer


In the event that an overwhelming urge to display anomalous feelings of group euphoria in a synchronized or coordinated fashion overwhelms the Chinese spectators during the Olympic games the official Olympic cheer is here to the rescue. More via Sina

Crouching Tiger Hidden Bacon

Bread in Asian shopping malls has an interesting positioning that is more like a dessert or indulgent snack. There are sandwich outlets but these mostly cater for Westerners or in some cases Asians who have lived or were educated abroad (a growing and highly influential population).

Easily the tastiest and best named bread snack in the world ever is the "Crouching Tiger Hidden Bacon" from Bread Talk here in Beijing. It costs 9 RMB (10 RMB to 1 Euro) and is most awesome.


I often like to buy one and drink one of their Yorkshire Tea lattes because even Northern Planner would crumble for a Yorkshire Tea latte if he hadn't had a single cuppa in months and months. Incidentally if any of you ever get round to reading Jeffrey Steingartens amazing book 'The man who ate everything' (and every planner should) you will discover that all taste is learned.

And The Spring Comes - 立春


I've just had the amazing good fortune to watch an important Chinese movie in all its cinema glory. I'm a film fan but pathetically handicapped about what I can watch and so the last full movie I saw was the awesome German Language 'Counterfeiters' on the flight from London to Shanghai in November last year. I'm back in love with movies after this because there is so much in this work that will help anyone trying to understand China, while at the same time telling a moving and relevant story.

It's quite a surprise that this film, And the spring comes - 立春 which is principally about artists and art in China, made it through the censors (SARFT) as although there are only a couple of scenes where the State reveals its ugly and invasive side the operatic leitmotif is pretty much that art is everything about truth and beauty the State has reason to fear the most. It's the unveiling of the human spirit in its purest and most uncontained form isn't it?

Aside from the homosexuality and sexual craving, even the mild partial nudity comes as a surprise in this movie after the recent blacklisting of Lust and Caution star Tang Wei from working in China. I found the operatic parts hugely moving with the end super bringing tears to my eyes. I don't want to say that its completely brilliant throughout as the narrative on occasions was a little patchy although sometimes deliberately so judging by the colour palette on the film poster

The photography, while good isn't say on a par with my favourite director Wong Kar Wai, although I think I could easily die quite happy if I expired while immersed in a scene from 'In The Mood For Love'. The colours in this film are a little washed out in the way that the light in Beijing really is most days. It's captured depressingly accurate, although when Beijing is unpolluted and shines it really does.

The lead actress Jiang Wenli is nothing less than a tour de force with one of the most powerful performances I've seen in a long time. She is married to the director Gu Changwei (Farewell my Concubine) and I understand put on considerable weight to fulfil this role. She acts so well that its difficult for other cast members to come across as better than average.

I want to give some additional thought to the scenes that I think are most important and so I'll probably come back with an update to this post but in the meantime here is a no subtitles clip from Tudou the Chinese version of Youtube and a strong urging that you try and see this important and definitive movie that encapsulates so much of what I love about the Chinese and yet why freedom of expression has yet to be fully understood and also why until it is fully embraced, movies like this will largely be a rare exception. Beijing Another View


I've never done a post like this but an email I received sparked such a good response that I asked if I could share it because I think it adds some really good flavour to the question what is Beijing like, through the lens of its vibrant music scene. Here is the response from Chris Emmerson which should really be seen in the context of two links that were sent prompting a private email exchange between three people, and which he has kindly agreed to allow me to share here. Finally got to these after a weekend off the intensive Mandarin. The science one was interesting: I did a study on perceptions of scientists back in the UK for a course I was doing, and the bitterness amongst that community is startling, particularly amongst biologists and biochemists. Scientists feel they have no status in the UK, and to do the 'good work' they all dreamt of as idealistic undergraduates they have to spent 15-20 years working in study groups they don't believe in, so that by the time they've reached the point at which they have the chance to set their own agenda they're politically conditioned to mark out and defend their own specialist territory, regardless of the value of research. A number of them suggested that since there was so much politics in funding, it was as well to have politicians actively running the show, since at least they might be expected to see the bigger picture and do politics well.

A lot of scientists end up in the private sector spending their lives tweaking established treatments so they can be re-patented: a fabulous waste of talent that was the elephant in the room as far as the article was concerned. So yes, China may have lucked onto a model that makes the most of a particular moment in its political and social history. I'd start on cancer if I were them, since living in this city is the equivalent of smoking approximately eighteen blue Drum roll-ups per day. I know because I smoked about eighteen blue Drum roll-ups per day until the day I left the UK, and my respiratory system has benefitted not one iota in two months.

As for the music: well....yes. If you're going to judge it in entirely musical terms....yes. And if you're a music critic, that's what you'll do so....yes. But personally, I'm finding the music scene here enormous fun. Possibly it's just that being in a foreign city gives you license to behave like a teenager sometimes but it's been a long time since I enjoyed going to gigs as much as here. The combination of aching cool and accessibility is striking. The bands all look like the cover shoot for your choice of cutting edge fashion mag the month after next, but you can wander up and chat to the lead singer after the set, even if you don't share a common language (you can also, in no particular order, learn a Taiwanese drinking game, teach a barman how to make popcorn in a microwave, discuss ska with a guitarist who thinks you're cool because hardly anyone he knows has even heard of Elvis Costello and get impressively drunk for under a fiver; although apparently if you're a Guardian music critic, you're above all of these things). There's also a bond with the audience that doesn't devolve into cloying sentimentality and I-saw-them-first one-up-manship which seemed to be an increasing feature of the London 'scene' the last time I was a hip young thing (which was, admittedly, never). And god knows, if most of them haven't got an original idea in their pretty little heads, at least they know how to put them together in a way that's entertaining.

In fact, I have wondered if it is the barriers to 'getting big' that keep things fun. Everybody's asprirations are on a similar scale; no-one's going to become U2 overnight. Having watched many documentaries about CBGBs, and then finally seeing the horror it had become in its final incarnation two years ago, D22 and its peers are the closest I've come to feeling how I imagine that scene was.

Right then. Now I've sorted out the future of science, politics and music I'll go back to my homework......

The Office (Party)

Well you live and learn. I've always had a problem with planned entertainment. Spontaneity makes me happy and when I was informed that we were having our office party some weeks in advance and that a 'committee' was being formed to organise entertainment skits for different account teams I thought it was going to be more of that teeth pulling obligatory presence that I put up with a couple of months ago at the 4A's advertising awards in December.

I filmed that particular fanfare they put us through for each award, including say best banner ad in B2B public infrastructure project tenders - you get my drift. Here it is because you can't make this stuff up when it comes to the levels of delusion in the advertising business.



So that's my view on organised fun. However our annual party morphed into everything I could have wished for. We headed for the great wall of China via coach and stayed in some architecturally really interesting lodgings called the Kempinski Commune. The proceedings began after a meal that was perfectly balanced and proportioned for an event of this nature (I loath wasted food at events) and then the skits began. As a rule we Brits have to get lathered up on the juice to have a good time but in general the Beijingers know how to have really good fun with just a glass or two to help things along, and this they did promptly with all their entertaining.

I expected amateurish good humoured attempts to entertain but what I saw was a transformational effect both by and of the people who I work with on a daily basis. It was pure planning porn and that included the film parody of the Hong Kong star who kept pictures of naked starlet conquests that were subsequently discovered by those guys who fix broken notebooks. So I learnt lots and had heaps of fun too. There was some senior management dough giving ritual thing that I didn't fully understand but that too turned into a kind of competitive egalitarianism and I was close to giving it all away right there and then, because I loved my colleagues so much in that moment being an emotional sort. You can't buy that kind of passion even if you neck a Red Bull or Three.


So at the end of it all my colleagues started to sing this song and I don't know why but it was sung with the sort of pride that is not about solipsistic nationalism but about a collective and mutual respect for each other and an optimism for the future. Well that was the feeling of it for me and I'm sure there is more but it just felt good and I got it on Qik so here it is if you don't mind me giving you a quick slice of Beijing life which has so much more substance than Shanghai in many ways.



Sorry about the sound quality but that is live to the net streaming so it's still being improved. I've got lots of footage of the entertainment skits but I'd like to leave you with what really is the moment that sinks in deeper than any other so far which is The Great Wall of China. The folks after the descent told me that you aren't a man until you've visited it, but I was unaware of that when I arose early to climb a section of it where it's evident that despite stiff competition from Bagan in Burma, Angkor Wat in Cambodia and Borobodur in Indonesia is easily the most lasting and physical testament to what a people can achieve with brute force, vision and resources that put the goal way ahead of the cost of its execution. I look forward to the day when we collectively apply that determination to reducing consumption, applauding frugality and worshiping that which we are blessed with for an infinitely short time in the big scheme of things. The chance to live a life on this speck of a seemingly lonely planet. So here is the Great Wall and Great it really is.

Hutong Life

One of the quintessential yet rapidly disappearing Beijing ways of life is the hutong. The hutong is the traditional architectural and communal structure for this style of living and stretches back centuries. Darkie

It was on my first trip to Burma in 2001 that I knew something was going on in a global cultural sense that I should try to understand. I was traveling light from one military checkpoint state to another when I saw the only sign of dissent in the whole country. It was a gang of youths dressed in cheap baseball hats and basketball vests playing of all things the unmistakable genre of Rap in Burmese. They were doing no harm but for sure they were saying things suck in Burma, and that's a fact because in Burma they really do.

I guess the reason for my incomprehension was that I didn't 'get' Hip Hop or Rap. I thought it was the lowest common denominator of music to dance to. Anyone could do it. A couple of gang gestures, a bobbing head and some Yo Yo exhortation meant that anyone was down with the bad asses. But it wasn't working for me. I couldn't see why people loved it so much and would frequently walk out of clubs in protest, as I always do if the music is rubbish.

Then I got some education.

Some years on from that Burma trip I was with some friends and invited to hang out in a bar on Royal City Avenue (RCA) in Bangkok called Hip Hop. The crowd were an unpretentious and friendly bunch and the music was really rather good when the DJ dropped a Diana Ross Hip Hop mix that blew me away and I knew what the problem was. I'd been listening to bad Hip Hop for all those years.

A conversation with a very smart DJ friend of mine helped also to clarify that Hip Hop was a culture, a movement and not just a genre of music and so now I have no problem hitting a bar for Hip Hop, but like all my music tastes I'm just a bit fussy about what I expose my ears too and need something that makes me think as well as feel.

Well yesterday I came across yet another brilliant Smashing Telly recommendation called The Hip Hop Years. The Origin of Hip Hop. Its on another level and sucked me in for the full 2 hours and 20 minutes 7 seconds. Its completely delicious and to ignore this fine documentary is probably on a par with ignoring the impact that Rock & Roll and Punk had on popular culture. Hip Hop is constantly reinventing, has embraced all genres of music from death metal to classical and brings young people together from the South Bronx to Burma.

But the reason for this post is that I've noticed something while globe trotting and parachute planning in a few countries. I've never come across an African or Afro Caribbean planner. There are plenty of great Indian marketing folk that I've worked with, but I'm starting to get the feeling that planning is predominantly a middle class, Indy music loving, Caucasian pursuit and that is most definitely not a good thing. As I've made clear elsewhere homogeneous advertising is made in homogeneous agencies. As far as I know only two three London planners have expressed an interest in the world's largest and fastest growing music genre and it leaves me asking a difficult question. Are we OK in advertising when it comes to rebranding a toothpaste from Darkie to Darlie but failing abysmally when it comes to black culture? Because if so, we are not representing.

Food of the Gods



I first came to live in London via Norbury, and so in a whimsical way even though I've lived all over the capital, including Belsize Park, Bloomsbury, Shepherds Bush, Camden, Clapham and more, there's a piece of me which always be a Sarf London boy. Recently its the massive South Indian community in this part of London that is pricking up my planning barometer trend antenna.

On my last business trip to Chennai (formerly Madras) in India I wandered around the back streets trying to observe and breath in a bit of the culture in a way that might contribute meaningfully to a market entry strategy report that I would later be writing for a multinational client. I've found that luxury hotels are the same all around the world, good for networking but awful for grasping how a country ticks and so on this particular sortie I found myself hungry for food but completely at a loss to even describe what may possibly have been a Tamil script menu in a clean but simple, open-front shop house. I plumped for the tried and trusted method of food adventurers around the globe and pointed vaguely at a bunch of ordinary Indians, indicating I'll have a bit of what they're having; and that's when my first dosa was brought to me.

Really good food should be simple and delicious. That's not actually as easy as it sounds and so ever since my first dosa I've been a proselytizing this simple but astonishingly tasty South Indian Fare. Its the "food of the Gods" as Mohammad Iqbal of Bangalore and I like to say. On my latest return to London I was really pleased to discover that a 'fast food format' of dosa food was available in my locale. When I say fast food, I'm sure the owners of this briskly expanding chain of restaurants would be a little annoyed at the term but what I'm getting at is an unfussy way of ordering and eating. The Chennai Dosa is a no nonsense, food-from-heaven kind of joint that I probably like to dive into and out of quicker than most of its patrons. The south Indian community in particular are some of the best and most welcome immigrants this country has ever had - and their cuisine is practically worth body-popping over, as its a little different from the Punjabi cuisine that most people associate with Indian food. Although this is a little like saying that European food is pretty much represented by Italian pasta and pizzas.

Southern Indians I find are hard working, family focused, low key and modest people. There's nothing I like more than dining at my local Chennai Dosa and studying this ethnic group of people who for me bring nothing but welcome diversity to this country. I've since worked my way through the Chennai Dosa menu and buffets over many visits and I think they've accepted me as a fan boy. Their food is inexpensive, tasty, healthy and all importantly; freshly made. Pretty much everything that Western (fast) food has moved away from and I pity the blinkered folk around these parts for whom the height of eating pleasure is either a Subway (sub way. I always think thats ironic) or other junk food fare, when world class eats are dotted all over the map in this neighborhood.

By complete coincidence, shortly after my discovery I thought I'd do a twitter search of my area and came across someone plugging the exact same Chennai Dosa I'm fanatical about, called Rory Sutherland. I thought I knew the name from somewhere and while adding him to my Twitter discovered that not only did he blog but that we were also in the same game - I've since discovered that he's a really top thinker in our business but more frequently Rory writes commercially dispruptive pieces for Brand Republic now, than the crafted and more literary posts I first came to enjoy . We've since had some twitter banter along with Giles about great Indian food spots as we're all Indian food fans but interestingly, Rory believes as do I, that the dosa food could quite possibly be on the cusp of something larger.

So I'm unashamedly plugging and suggesting bigger things for The Chennai Dosa Group. You heard it here first (think McDosa) and I believe their next outlet is opening in Tooting. Try also their Idli or the Idiyapam) and more importantly for UK planners I'll be wrapping this up later into a broader post about third millennial cultural observations and trends that I've found both provocative and inspiring this time round in these parts of London.
